There is more growing here

If spring onions are already in your kitchen, their rooted ends can grow fresh greens — a small beginning hiding in dinner.

After cooking, keep the white ends with roots attached. Stand them in a cup you already have, with shallow water covering the roots, in a warm, sunny spot. Keep the roots submerged and change the water weekly. As new greens grow, snip some for cooking. The bulb will eventually use up its reserves; this is a little more from what you have, with something living to tend along the way.
